Swallowing (deglutition) is a complex action involving over 22 muscles, coordinated by a pair of nuclei in the medulla oblongata (swallowing center). Swallowing occurs in three phases. Oral phase: tongue forms a food bolus and pushes it into the laryngopharynx. Pharyngeal phase: soft palate and root of tongue block food and drink from nasal cavity entry or re-entry to the mouth. Esophageal phase: peristalsis (involuntary muscle contractions) drives bolus downward.
