From Paris to Palo Alto

C

hef and owner Guillaume Bienaimé blends classical French cuisine with modern cooking techniques at Palo Alto’s newest restaurant, Zola. Previously the chef at Portola Kitchen and Marché, which the Michelin Guide named a top-25 restaurant in the Bay Area, Guillaume sat down to talk with Metro about his new restaurant.

WHERE DOES YOUR COOKING BACKGROUND START? My grandmother was a great cook and food was always a part of our life. Life really revolved around meals. I started cooking when I was 15. After a few days working I realize, ‘why am I going to school?’ The fact that you get paid to be in a kitchen was pretty cool. I went to school perhaps a little late for a cook, at Johnson and Wales in Providence, (Rhode Island), but you know, I was lucky to do a stage at Marché in Menlo Park when I was still young and then I came back after college and Howard (Bulka) offered me a sous chef position—I took it. HOW DID YOU COME UP WITH THE NAME ZOLA? I was looking for a name and searching through a French dictionary and I just couldn't find a word that was easy to pronounce, easy to write, easy to remember. I didn't want people to feel uncomfortable pronouncing the name or couldn't look it up on the Internet because they didn’t know how to spell it. Also I think there’s an association with French cuisine: It’s expensive, or it’s snotty and pretentious and I kinda wanted to step away from that. I was reading Anthony Bourdain’s Les Halles Cookbook and he mentioned [Émile] Zola and a book that he wrote called “The Belly of Paris” about the markets of Paris. And that was it—Zola. BEING OF FRENCH BACKGROUND AND YOUR EXPERIENCE AT MARCHÉ, WAS ZOLA DESTINED TO BE FRENCH? I opened Portola Kitchen in Ladera a couple years ago and it had done pretty well—psychologically it made me feel comfortable opening my own thing. Although I had done a $2.2 million restaurant in Ladera, with my own money I felt more comfortable doing something a little smaller and I’ve always wanted to be in Palo Alto. It always made sense. At first I wanted to do something really casual, kinda bar food—maybe French or Spanish. I like to find the space first, knowing there is opportunity and then I create the concepts. It kinda happens to be that there is no French food in Palo Alto, so that ended up working out.

It’s French food, without a doubt. We just try to lighten things up a little bit—so not everything is butter and cream. I’m not trying to do things that differently—just try to think about the technique a little bit and not just rely on what they may have done 50 years ago in classical French food. A lot of this is from the Marché cookbook, minus $10 a plate.— Jeff Cianci

The poutine version comes filled with fries and drenched with gravy. The macaroni-stuffed cube comes topped with either pulled pork or bacon, smothered in melted cheese and sprinkled with croutons. Meat and cheese on bread and more bread for $15 a pop. There’s a reason it’s reserved for the late-night menu, along with chicken and waffles, chili fries and other dishes one craves after a bout of heavy drinking. Off the Street’s strength is its simpler fare: sandwiches packed with smoked meats and bread baked with a wild starter. Co-owner Aric Dang made the starter in his home kitchen, adding persimmons from a backyard tree to give it a subtle tang. Pang, inspired by a Russian deli where she used to work, smokes all the meats herself. “We want to make sure all the ingredients are really, really good,” says Pang, who runs the place with Dang and partners Ton Luong and Vinh Quoch. The pork belly sandwich ($9)—slow-baked pork on a sourdough roll with a crunch from cucumber and a kick from hot Korean barbeque sauce—is one of the more popular items. Also a favorite: the house-smoked pastrami ($10.50) with sauerkraut, creamy Russian dressing and Swiss cheese melted on a rye roll. Pang’s pulled pork ($9) appears not just on “The Cube” but the lunch menu, too, served atop a Dutch crunch roll packed with coleslaw and house-made barbeque sauce. There’s cold smoked salmon with caramelized onions ($10.50), chipotle chicken with melted brie ($9) and, the lone veggie option, a grilled squash sandwich ($7). Both Pang and Dang defected from fine dining—the uber-luxe and Michelin Star’d Plumed Horse in Saratoga—to run their own lunch spot. Tucked away in a Blossom Hill strip mall populated by chain restaurants and grocery stores, Off the Street invites like a dorm common room, stocked with board games, a widescreen TV playing Nickelodeon, an antique radio and a well-worn leather couch. A quirky assortment of prints decorate the walls—a black cat strapped with missiles (drawn by Pang), an abstract rendering of a red fox, comic book covers and a painted-on chalkboard where patrons have scrawled a turkey (last week it was an elephant). Reading the Ruins A LOT CAN BE gathered from a city’s leftovers. Just ask Leyla Cardenas. The Colombian artist has long been intrigued by the things that societies willingly discard. Leyla Cardenas: ‘Scarcity’ Growing up in a civil war-torn country, Cardenas recalls searching for meaning among the piles of Nov 15-Jan 31, debris and wreckage she would regularly find in 10am-5pm, Free her home town of Bogota. Over time she became San Jose Institute of fascinated with these once so permanent structures Contemporary Art reduced to rubble. sjica.org “I started collecting things the city would throw away,” she recounts. “Those voids in the city were very revealing to me.” Pondering over the scraps of facade, broken windows, tangles of lumber and crumbled cement walls, she wondered what the ruins suggested about her community and its reverence or disregard for its past and what they might portend for the future. These discarded artifacts and the questions they raised in her mind eventually became the building blocks of Cardenas’ art, which has expanded over the years from considering issues of cultural identity in her native Colombia to exploring the ways other communities around the world deal with their past as they move forward into the future. “The question I’m asking with a city or place is how they deal with memory and the past,” Cardenas says. With Scarcity, opening this Friday at the San Jose Institute of Contemporary Art (ICA), Cardenas puts these questions to San Jose. Cardenas has a particular interest in architecture. Scarcity, which opens Jan. 15, compiles plaster impressions of historic buildings from around Market Street, which she will arrange for display on the gallery’s walls and floor, and tells the story of San Jose’s complicated, and almost adversarial, relationship to its past. Once the “Valley of Heart’s Delight” and the first capital city of California, San Jose has since been branded the “Capital of Silicon Valley,” and its focus on progress and innovation through tech seems to reveal a community more interested in disruption than legacy. “I feel California definitely moves at a different speed, especially Silicon Valley,” Cardenas says. “There’s not that relationship with the past. You feel it is a little bit in transition and there is nothing that takes you back.” The exhibit is asking questions that are especially relevant in the here and now. As this tech-oriented region comes charging out of the Great Recession and new developments spring up all over downtown San Jose, Cardenas hopes her exhibit will get people thinking about the city’s proud past even as they move inexorably forward into the future.— Brandon E. Grooves and Moves A FEW MONTHS AGO, Con Brio guitarist Benjamin Andrews had a revelation: Con Brio is his favorite band—and not just his favorite among those bands that he’s played in—but his favorite in general. He’s making exactly the music he wants to make. A lot of the recently buzzed-about R&B has sailed off to weirder, electronic places, but Con Brio’s lineage is clearer. The core rhythm section of keyboardist Micah Dubreuil, bassist Jonathan Kirchner and drummer Andrew Laubacher has been playing together since 2009, and after losing their previous singer last year, they added on Andrews and frontman Ziek McCarter. A rotating horn section rounds out their more traditional instrumentation, but nailing down their sound isn’t too easy. They check funk acts Sly & the Family Stone and Billy Preston as influences, along with Stevie Wonder and neo-soul artist D’Angelo. Really, these guys just sound tight, completely put together, and Andrews knows it. “I’ve never had such a complete package,” he says.

An integral part of the package is McCarter—Con Brio’s charismatic, multi-talented frontman. He can croon, he can wail and he’s got moves. He cites entertainers like Prince, Bob Fosse, and James Brown as the inspiration for his stage presence. “I’ve been dancing since I was 2,” McCarter says. “I was kind of kid that would set up a camera, dance an hour straight and go back and watch it. I’m always asking, ‘How can I tell a story with my moves?’” To get a sample of McCarter’s ability, go online and watch one of the band’s shows at San Francisco vintage-and-antique store, Viracocha. During a rendition of “Never Be the Same,” a song from their forthcoming EP, McCarter glides across the stage, executes spins, shimmies and at one point nails a perfectly timed drop split, James Brown-style. McCarter’s impressive footwork compliments the invigorating power of songs like “Give It All” from their forthcoming EP, Kiss the Sun, (due out in January).The song is bursting at the seams with energy—especially when the triumphant horn section builds to McCarter’s high falsetto and Andrew’s wicked guitar solo. McCarter says the song, co-written with Dubreuil, started out as an ode to a passionate long distance relationship before turning into a conduit for channeling the spirit of his father, who was shot and killed—while unarmed— by a police officer in 2011. “I was my father singing to my mother,” he says. “It transformed into a hybrid of both.” “It’s ecstatic, man,” Andrews said. “Everybody is sweating half way through the intro and I don’t even know why. It’s not cardio, it’s energy.”— Stephen Layton
