What exactly is Söz Kesmek?
When googling it, I discovered different names, some said “söz kesme” and “söz kesimi”
I’m curious what the Promise Ceremony of the cutting of the red ribbon connected to the two rings is officially called. Is “Söz Kesmek” the correct term when referring to that ceremony?

It may be "sözlenmek" too.
Usually done if it is necessary to wait for the engagement.

Söz kesmek is the third (first is evlilik teklifi, second is kız isteme) and little ceremony what you did before marriage. Two families meet in the house of one of them. Just with close relatives like aunt, uncle, cousins etc. . Couple wear ribboned rings and chosen one makes a speach (mostly oldest male relative) and after the speech he cuts the ribbon and say good wishes. No dance, no crowd etc. It's like just an approval between families and an announcement.

In addition to these, it is important to drink turkish coffee. The coffee is served all guest by bride. one of the coffee is private prepared for the groom and a little salt is spilted into this coffee. If the groom be able to drink this coffee, turkish people believe that the groom will make the bride happy and protect her forever.
